Crushed oyster shells has been used for substrate, but you cant put a goby or starfish or any other sand sifting animal in it cause it would cut them up.

What about putting one in there whole... uncrushed? Thought it might make some interesting live rock (no oyster in it, of course!).

No reason you shouldnt be able to do that. Clean it good first, make sure there is nothing that is going to cause bad bacteria. This is in a mature tank? It shouldnt cause any problems. It may leach a little calcium but thats not a bad thing.
